Hello there,
I have several floppy disks with music software developped at IRCAM in the early 90s, all of them for 68k Mac.
AFAIR, MacOS 9 was able to run software for Mac 68k, but when I try to launch any of them, I get a big system crash on my PowerMac G3...
Any advice ?

Yes, Mac OS 9 can still run 68K software, but if the software depends on quirks/earlier APIs in the Classic Mac system software or particular hardware from the early 90s it may still not be Mac OS 9 compatible. My advice to you is to try it on a system running System 7. You may also try on an emulator like Basilisk II that approximates and early 90s machine.
